Fresh Herb Chicken Salad




So today, I decided to buy a store-made rotisserie chicken. My original idea was to use the meat in a pasta and use the carcass for stock. When I realized how much extra celery I would have, I decided on making a couple chicken salad sandwiches. Fresh herbs and minced vegetables give this fresh salad a twist. Adding dill or parmesan to the final product will give it an extra oomph.

Ingredients:
1 cup shredded rotisserie chicken (all ready cooked from supermarket)
2-3 tbl mayo
1/2 carrot, diced finely
1/2 celery stalk, diced finely
1 tbl fresh parsley, minced
1 tsp fresh thyme (or to taste)
1 tbl scallion, sliced finely
salt (to taste)
pepper (to taste)
scant dash of nutmeg (freshly grated is best)
dill (optional)
freshly grated parmesan cheese (optional)

1. Combine all ingredients.
2. Season with salt and pepper

Mmm Mirepoix.
